I trust you all had a wonderful Christmas!  I sure did!  And Happy New Year everyone!  Happy NEW Baking!  I sure tasted a lot of food this Christmas and sure you did too!  I will post the recipe for my favorite soon…chicken cheese ball!!!  mm!  My new years resolution?  hmm, I don’t really make these, but I will make it to be find an awesome guy this year!  ha!  We’ll see!  Oh and on a more comical side, learn to play foosball and pool better!  Yes, that came from a new years party where I learned I was not very good at either…actually I already knew, and it just supported my thoughts!

Just to let you know…

my iPod woes got “washed away” last Saturday…11 days after my predicament.  I guess it finally dried out by then.  I plugged it into my macbook and it charged up and it now works.  It’s very slow, and the touch wheel barely works, but hey, it’s better than throwing it away!  Thanks to everyone’s assistance and thoughts and support! So, this week has been one of the those that hit near some of my worst.  I was craving a brownie.  I have a recipe from scratch that only calls for 1 egg, but I was so tired and just wanted to use the mix so there would be less clean up and less items to get out.  Well the mix box called for 2 eggs along with 1/3 cup oil, and 1/4 cup of water I do believe.  I only had 1 egg.  I decided it was worth the try…yes, I wanted it that bad!  Well, they were EXTRA chewy, but I am positive they taste better!  I’m serious!  So, some tips for 1 egg brownies…..

  • cut them as soon as you can while they are still hot, otherwise they will be very hard to cut
  • you may like the chewy, but if you don’t, microwave them for just a few seconds individually on a napkin and they taste absolutely wonderful!! 
  • Leave me any questions you may have about this or other questions….I’m going to get a 1 egg brownie!

Am I thankful for those tears? No, not exactly the tears…but the experiences that came with them.  The knowledge each of them brought me.  Would I go back and change things?  Umm…no, because even though the best days of my life led to the saddest, the best outweigh the worst.  I am thankful for the experience and the memories.  I’m thankful for those crazy days.  Would I go back knowing what would happen?  I do believe I would…but I think I would change things if I could and make it even better and maybe I could change the sad ending. 

Yep, that’s my thoughts of the day.

If you are going through a trial or tough time…just remember the experience it’s giving you.  It’s making you stronger.

My birthday (the big one nine) is Sunday, the 26th.  Shouldn’t I be happy?  it’s weird…

i guess i just feel a little down….

no, i’m not depressed or anything.

things just don’t seem to be sunshiney and looking up i guess

it’s cold, it’s rainy, i am sick again–with that HORRID cold, and i’m just tired and worn out

and i couldn’t get a cute “happy birthday” picture to go into my post.

That’s right, my baby is back!  I should be back on this week!  Yay!  Sadly fall break is over though. 😦  Look forward to a post soon this week…probably Wednesday!  Hope all is well!!

There’s a show on CBS (I’m pretty sure!) called Worst Week.  It comes on on Mondays.  It’s rather funny.  A tad crude humor, but it’s in moderation.  But I kind of came in the middle of it, but there’s a guy and girl and I don’t believe they are married living in her parents house and she’s pregnant. They are waiting till the “perfect” time to tell her parents while everything seems to go wrong.  He’s done quite a few interesting things.  It’s just funny I guess……but I’ve felt like that guy this week!

This has been a horrible week.  First off there has been a situation going on where I have been battling God. Thankfully I’m leaning on Him for guidance now, but it’s been very hard.  I believe that with Him all things are possible.  But before when this situation arose, I just “knew” he was going to “fix” it and he didn’t and it was kind of a wake up call for me I guess. I hate SO bad it had to happen like this.  But it boils down to I’ve lost one of my best friends to an injust court system.  I’ve really been upset about this all week, so your prayers are REALLY appreciated.  For both of us. 

Then lets see, I failed a Philosophy exam I’m quite sure of this week.  I’m sorry, but it’s hard to prove the existence of God and then on the same exam prove that he DOESN’T exist.  Sorry, but I don’t think that way. I guess that’s just one of the “joys” of college life. 

And my grand conclusion is, MY BABY CRASHED.  😦  That’s right, my laptop went out on me Wednesday.  I had TONS of homework to do.  I get out of my class, go to start typing it all up and my laptop wouldn’t come on, it just kept freezing.  So it’s currently being worked on and who knows when I’ll get it back. 

But to put the icing on the cake, I have a lot of friends going through some tough times right now and it’s just getting hard to be there for everybody while you’re going through so much too.  But God’s taking care of me. 

And foody wise, I made an apple pie last night that was so YUMMY.  It made me so happy!  AND also another happy moment God blessed me with is I received a cedar chest as a surprise gift this week.  It was handmade and I was so surprised.  It’s absolutely beautiful.  God takes care of me, and I know he does you….  Have  a  happy  weekend!
