February 2008

So in memory of my grandma who passed away recently I will post one of her recipes on here.  All my other ‘grandma’ recipes in the past have been from my other grandma but here’s you a special one.  These are very easy to make and very good.  Just enough chocolate without too much!

  1. 2 Eggs
  2. 1/2 cup shortening
  3. 1 cup sugar
  4. 1 teaspoon vanilla
  5. 2 1/2 cups flour
  6. 1 1/2 teaspoons baking powder
  7. 1 cup milk
  8. pinch of salt

    9.   pinch of soda

    10.  2 tablespoons cocoa

    11.   2 tablespoons sugar

  • Mix eggs, sugar, shortening and vanilla. Add dry ingredients and milk until mixed well.
  • Divide in half and add chocolate mixture to one half. Spoon some of each batter into muffin pans. (i line mine with paper baking cups and I put the vanilla on the bottom, chocolate on top.)
  • Bake 15 minutes at 375F.

Oh how I have become addicted to these little squares. They are so GOOD.  They are completely different when you microwave them for 10 seconds.  They taste like they just came out of the oven!  SO GOOD!  I have only tried the Apples & Cinnamon flavor but I’m sure the others are good.  A family member brought them to us when my grandma died for breakfast for us.  I eat them as a very good and quick snack.  They are good for you too and they fill you up!  TRY ONE TODAY!

From the site: “Apples & Cinnamon

Baked Apple Quaker Oatmeal to Go combines the comforting flavor of apples with sweet cinnamon and all of the heart healthy fiber and nutrition of a bowl of instant oatmeal baked into every delicious, moist square. Finally, a breakfast that is ready to go when you are.”

Wow.  Sometimes life can be so confusing.  This weekend I felt like I was in a dream, and I really don’t think reality has set in for me.  My grandmother passed away Friday around 5:30pm.  It was yet again one of the hardest things I’ve ever had to do.  I felt like I was almost losing her a second time.  She was diagnosed with alzheimer’s disease a little over 4 years ago and she was put into a nursing home.  She lost her mind very quickly and soon didn’t seem to recognize us and wasn’t able to respond.  It was so sad and I felt like I had lost her then.

On Friday, my cousin and I went to visit her around 4.  We usually went every Friday together and it had become something I looked forward to.  Well she was really bad off.  She couldn’t breathe and it seemed to be such a struggle for her.  It really hit me hard.  It hurt so bad to see her that way.  Well we went back and I called my mom and she went back up there.  We knew she was upset so my brother went up to be with her.  He came back to pick me and my dad up and go back up there and while we were on our way she passed away.  When we walked in the room it was like walking into a different world.  It was horrible.  Thankfully she will suffer no more.  She is so much better off.  It’s still just so  hard to deal with sometimes.  God is good though, and he obviously knew what he was doing.

Everything went well though. The flowers were beautiful…the service went good.  She would have been very happy.  Heaven just had another great addition-I can’t imagine what it must be like now.  Truly amazing.  So now as our house is full of flower arrangements from Valentine’s Day and the funeral…it’s just a simple reminder of how people care.  Thanks for your prayers and continue to keep us in your prayers when you think about us.  ♥ ase

This is an extremely easy recipe that is so good.  It’s great for lunches when you desire a change.  🙂

  • 2 cans chicken
  • ½ cup mayonnaise
  • 2 tablespoons pickle relish
  • Salt & pepper to taste

Place one can of chicken in food processor at a time.  Then combine rest of the ingredients and serve on bread.

This weekend was a blast!

My family and I traveled to TN for a business trip on tires!  I wasn’t sure how it would be but it turned out lots of fun.  Yes I know this is totally non-food related but we all have to make a little change don’t we?  Well all the ladies were taken to The Barter Theater to see Peter Pan.  I wasn’t sure how it would be but it was absolutely neat!  It was really fun and was really well done.  I will definitely be going back hopefully soon!  I would recommend it for everyone to see, even if you don’t like that kind of thing.  Visit their web site for the showings & dates.

We stayed at Meadowview Conference Center in Kingsport, TN and it was extra nice.  Everyone was so nice and it was very clean.  We had buffet breakfast lunch & dinner there and they were all very good.  GREAT food!  I would also recommend this place for any event.  I was able to exercise all my Home Economics class thing that I learned.  I also knew most of the napkin folds!  😉  I felt really smart!  Saturday morning before leaving for Barter Theater we had a few hours to kill after breakfast so me and my mom went to the fitness center there which was also really nice.  Got a nice workout and had fun since no one else was in there at the time!  Overall, it was a really nice trip in every way.  Other than the fact that I am exhausted today!

On the way home, we stopped at Natural Tunnel which wasn’t that big of a deal to me since I really didn’t know much about it and all I wanted to do was sleep on my comfy pillow home and it was COLD.  Well we stopped and it was AMAZING!  I had seen a few pictures and didn’t really think much about it but that place was amazing.  I have never seen anything like it.  I think EVERYONE should go see it.  There is a train that goes thru it and we waited awhile and it never came so we hiked about half-way back up and then heard a whistle.  We flew back down and I got an awesome video of it going thru!  I might try to post some pictures/videos but trust me, it does NOT do justice AT ALL!  In the normal warm seasons there is a chair lift you can ride but you have to hike in the cold months.  It really wasn’t a bad hike, even after taking a run on it!

So we stopped at a Craker Barrel for lunch/supper and then came on home driving thru HORRIBLE winds.  We got home and there was no power and then we had to get our generator out.  It came back on 8:30-9ish and then I crashed in my bed…and did NOT want to get up this morning.  But I made it and here I am.

It was a fun weekend.  Anyone wanting anymore info just leave a comment!  PLEASE leave a COMMENT if you’ve been to any of the places!  I’d LOVE to hear!

My Grandma’s cookbook has been absolutely wonderful and it’s probably my favorite, but since you can’t actually go out and buy it then here’s a few of my favorites! Not in any particular order since I love and use them all!
