Melt 3 tablespoons butter, remove from heat. Crush 3 cups bite-size rice chex cereal to measure 1 cup. Add to butter. Stir until evenly coated—set aside.
·        1 can cream of celery soup
·        ¼ cup shredded Swiss cheese
·        2/3 cup sour cream
·        ½ teaspoon seasoned salt
·        ¼ teaspoon onion powder
·        1/8 teaspoon pepper
·        1/8 teaspoon ground thyme
MIX thoroughly. Fold in one 16 oz or 20 oz bag frozen vegetables combination (carrots, broccoli, and cauliflower). Pour into buttered shallow 1 ½ qt baking dish. Sprinkle crumb mixture on top.
Bake at 350 for 40-45 minutes or until vegetables are tender.

1-16 oz can pear halves, undrained and chopped
1-15 ¼ oz. can pineapple chunks, undrained
1-10-oz can frozen strawberries, thawed and undrained
1-8 ¾ oz can fruit cocktail, undrained
2 bananas, sliced
2 apples, cored and cubed
1- 3 ½ oz pkg instant vanilla pudding mix
COMBINE all fruit. BLEND well. STIR in pudding mix. COVER & Refrigerate 8 hours.


For this blog assignment we are supposed to tell who are favorite candidate for the presidential election is.  This is pretty hard because I don’t believe there is any one really good candidate but I guess that nobody is perfect.  My choice right now will probably be Mike Huckabee.  He’s a 53 year old Republican from North Little Rock, Ark.  His education includes a bachelor’s degree from Ouachita Baptist University, and a Masters degree from Southwestern Baptist Theological Seminary.  He was elected lieutenant governor of Arkansas in a special election andwas subsequently voted to a full four year term in 1994. 

I think that this man has the best values and he goes along with a lot that I believe as a Christian.  He is against abortion and that is a major plus.  He believes that marriage should be between ONE man and ONE woman. 

I think I will be choosing between the lesser of the evils this election. :-/

Apple Zeppole with Cinnamon Whipped Cream

1 large apple, peeled and grated (about 1 1/2 cups)
1/4 cup sugar
1 stick butter
1/4 teaspoon salt
1/2 cup water
1 cup flour
4 eggs
1 cup whipping cream
2 tablespoons confectioners’ sugar, plus more for dusting
1 teaspoon cinnamon
Olive oil for frying

In a medium saucepan combine the butter, salt, sugar, and water over medium heat. Bring to a boil. Take pan off the heat and stir in the flour. Return the pan to medium heat and stir continuously until mixture forms a ball, about 3 to 5 minutes. Transfer the flour mixture to a medium bowl. Using an electric hand mixer on low speed, add eggs, one at a time, incorporating each egg completely before adding the next. Beat until smooth. Add the grated apple and stir to combine. If not frying immediately, cover with plastic wrap and reserve in the refrigerator. Combine the whipping cream, 2 tablespoons confectioners’ sugar, and cinnamon in a
medium bowl. Whip until medium soft peaks form. Transfer the whipping cream to a serving dish.
Meanwhile, pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 325 degrees F.

Using a small ice-cream scooper or 2 small spoons, carefully drop about a rounded tablespoon of the dough into the hot olive oil. Turn the zeppole once or twice, and cook until golden and puffed up, about 4 minutes. Fry the zeppole in batches so as not to overcrowd the pan. Drain on paper towels. Transfer the zeppole to a serving dish and sprinkle with powdered sugar using a small sieve. Serve with the cinnamon whipped cream alongside for dipping.

 This recipe is DELICIOUS! I made it as an appetizer and it was great!  I was eating the cinnamon whipped cream by itself!  HAHA!  This recipe is VERY easy and VERY tasty!!

This cake looks so easy and YUMMY!  It’s really neat how you can read about how others have thought about it and whether they liked it or not.

1 pkg. (2-layer size) yellow cake mix
2 cups  cold milk
1-1/4 cups water
2 pkg.  (4-serving size each) JELL-O Lemon Flavor Instant Pudding & Pie Filling
1/3 cup granulated sugar
2 Tbsp.  powdered sugar
PREHEAT oven to 350°F. Prepare cake batter as directed on package. Pour into greased 13×9-inch baking dish; set aside.POUR milk and water into large bowl. Add dry pudding mixes and granulated sugar. Beat with wire whisk 2 min. or until well blended. Pour over batter. Place baking dish on baking sheet to catch any sauce that might bubble over sides of dish as dessert bakes.BAKE 55 min. to 1 hour or until wooden toothpick inserted in center comes out clean. Cool 20 min. (Sauce will thicken slightly as it cools.) Sprinkle with powdered sugar. Spoon into serving dishes to serve warm. Store leftovers in refrigerator.


Saturday, January 12, 2008 at around five AM my family lost the last of one of the most amazing generations.  My Great Aunt Hazel (I always just called her Aunt Hazel) passed away at 96 years old.  Her and her sisters were all amazing people!  I know they are all greatly missed.  I only remember my grandma and Aunt Hazel but I have heard MANY stories about all the rest.  Aunt Hazel was just like another grandma to me and will be greatly missed.  She was the last of that generation and she will be missed but all the memories of those sisters will live on forever.  Every family get-together there will be SOME story of something they all did!  I have learned through all the tough times we’ve all been through that we are an amazing family.  We truly are.  And I really don’t think that you will ever be able to find a family exactly like ours.  I am VERY thankful for them. 

I have been truly blessed in so many ways and even though sometimes it’s hard to see it… I am…

Heaven is now extra amazing with the addition of my great aunt to join all those she had outlived!  I can’t imagine what it is like now to have them all back together!  We miss them, but they will never suffer again…

I want to give Keelie an extra special thank you for all she did for me.  She was there when I needed to talk and I could call her anytime and she was there just to listen and that meant so much.  I really have some amazing friends too and you all know who you are.
