Custard Pie
One 9 inch Pie
 
Pie Crust:
*      1 ¼ cups all-purpose flour
*      5/8 teaspoon salt
*      ¼ cup + 2 tablespoons of vegetable shortening
*      1 ½ tablespoons cold unsalted butter
*      3 tablespoons ice water
 
Sift the flour and salt together.
Cut the shortening and butter until it is about pea-sized. 
Sprinkle the water, blending it gradually, into the dough until the dough just holds together.  Shapes into a disk…see below for further directions.
*     1 large egg yolk, beaten
 
Custard Pie:
**Roll the pie crust out and place into a 9-inch pie pan.  Glass works the best.  Build up a high fluted edge.  Glaze the crust with 1 large egg yolk.  Prick the bottom of the crust and bake for 10 minutes at 425F while you prepare the filling.  Decrease heat to 325F when crust is done.**
 
Whisk together in a large bowl just until blended:
*      3 large eggs
*      2 to 3  large egg yolks
*      ½ cup sugar
*      1 teaspoon vanilla
*      1/8 teaspoon salt
 
Bring to a simmer in a medium saucepan over medium heat:
*      2 cups whole milk
 
Gently whisking all the while, gradually add the milk to the egg mixture.  Immediately pour the hot custard into the warm crust.  Dust top with ground nutmeg.
 
BAKE 25 to 35 minutes at 325F.  Bake until the center of the custard seems set but quivery.  Cool completely on a rack.  Refrigerate as soon as it has cooled to room temperature.

These are my lifesaver cookies.  You can make 2 batches with one can of pumpkin!  They are so yummy!  ENJOY!

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter (1 stick), softened
  • 1 cup LIBBY’S® 100% Pure Pumpkin
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Glaze (recipe follows)

Directions:
PREHEAT oven to 350° F. Grease baking sheets.COMBINE flour, baking soda, baking power, cinnamon, nutmeg and salt in medium bowl. beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.BAKE for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.

FOR GLAZE:
COMBINE
2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.  (I put this mixture into a ziploc bag and put a tiny cut on the corner and then drizzled it over the cookies!)

Preparation – 10 min | Cooking – 18 min | Cooling Time – 2 min cooling | Yields – 36 cookies

Well the bakerista made a HUGE baking mistake this Thanksgiving!!!  It’s not as bad as you think…but STILL….

OK, so everybody has seen my Gooey Butter Pumpkin Cake recipe, right?  Well I had decided to make it for my family’s Thanksgiving get together.  Wednesday night I was going to go ahead and make it because I had other things to make on Thursday morning.  We were going to eat around 6ish.  So at the last minute I decided to change my mind and wait till Thursday morning to make it.  Yeah, I could get up early!  and then it would be very fresh, maybe even still warm??  Mmmm!!  Wouldn’t that have been YUMMY!  WWWEEELLLL…………………so I get up Thursday a little tired, but all excited about the Thanksgiving festivities!!  OK, so I was going back to my room to change out of my PJ’s but I decided to set my butter and stuff out to be softening.  So…DRUM ROLL…. I HAD COMPLETELY FORGOT TO GET CREAM CHEESE!!!!!!!!!!!!!!!!!!!!!!!!!!   So silly me!  I couldn’t think of anything else to make.  I had that wonderful can of pumpkin just sitting there waiting to be used and  nothing to use it with!  So, I ran to the internet and at home we have the horrible DIAL UP   AND to add to that, something is wrong with the stupid thing and it disconnects every few minutes, or even sometimes seconds.  SO FINALLY I found a recipe for soft pumpkin cookies.  It took a half a can of pumpkin for one batch so I thought, hey, I can make TWO!  So I did and it was great!!!!!!  I guess I would say that would be one thing I would have changed about Thanksgiving…getting CREAM CHEESE, but to be honest, I think the pumpkin cookies were even better!  So maybe it was all meant to be.  I’ll be posting the recipe on here soon!!!  Hope you all have a wonderful Thanksgiving!!  The baker who lacks the memory…bakerista!!!

For this assignment we were asked to make an excel spreadsheet that contained what we did in a 24 hour day for an entire week.  This included for me:  sleep, school, getting ready, church, having fun, supper and work. 

Sleep, School, and having fun took the top 3 spots in my day to day schedule.  Sleep took the top place, taking up 37% of my time.  Having fun came in next with 25% and then school came next taking up a whopping 22% of my time!!! 

I was quite surprised at how much time I spent asleep.  Sometimes it varies but still it was surprising.  I was surprised that 22% of my week is spent at school!!  School obviously has  a huge impact in my life right now.  And a lot of that having fun time is spent doing homework too! 

This has impacted my life because I want to spend my having fun time more wisely.   There’s a lot of things I want to do each day that I don’t have time doing.

In my computer class we did an assignment to write down what we would eat at Wendy’s, McDonald’s, and Burger King as a meal.  Then we looked online to see how many Calories, Fat Calories, Non-fat Calories, and Percentage Fat.  Actually we calculated the Percentage Fat. 

I will tell you about what I discovered at McDonald’s.  For McDonald’s I chose the 3 piece chicken selects, medium fries, a honey packet and a medium Sprite.  That meal contains a total of 1020 Calories!!!  It contains 360 fat Calories and 660 non fat calories.  That makes the fat content 35%! 

I was quite surprised at how many Calories are in just one fast food meal.  It really adds up!  I guess that 35% fat content is not too great but if you eat fast food often then this can really become unhealthy.  I don’t think that eating fast food occasionally is gonna be life changing but if you eat it every day it can become life changing.

So did anybody make anything this weekend?  I was really in the baking mood this weekend.  Friday I made the southwestern stroganoff with baking soda biscuits.  I also made a cheesecake for my brother…why you ask…well that is a long story!  Then Saturday I started making yeast rolls and a hashbrown casserole.  It all turned out delish!  And guess what I have for my lunch today?  I have southwestern stroganoff, hashbrown casserole and 2 little rolls that were left!  Who else has a lunch that good???  HAHA!

This weekend God showed me…

well it’s rather an ongoing thing, not necessarily just this weekend but He has been showing me that he is with me and he is been showing me what all I should be thankful for.  He has really been blessing me in so many ways.  He has also blessed me with wonderful friends that are always there for me when I need them and it’s so wonderful to have them.  But the main thing I’ve learned is to be thankful for what all He has blessed me with and I encourage you to do the same!  🙂  I’ve really been struggling with things going on here at my school.  It’s really hurt me to see the way people treat others.  And even to their face.  Just plain out making fun of them and being so disrespectful.  I know we all make mistakes, myself included, but it just hurts to see people professing to be such wonderful Christians and then they go around acting like that at a Christian school?  I just don’t understand why…people always have to be so mean…
